A free, remote workshop dedicated to "Techniques and notions for the preparation of PDO Tuscan Bread". It is promoted by the CEDIT training agency as part of the project funded on the PS-GO call for "Pane Plus Days - Agronomic and technological methodologies designed to increase the" shelf life of Pane Toscano DOP ".
It is a five-hour training project, from 2 pm to 7 pm on Tuesday 1st March 2022, to provide theoretical and practical notions relating to the preparation of Tuscan PDO bread. Specifically, topics such as the first refreshment of the sourdough, the second refreshment and the first dough, autolysis, the ingredients of the bread, dough preparation, sour mother and dough, dividing and forming, cooking and preservation of bread, Tuscan PDO bread will be addressed. , the overturning of the vein and the application of the “dop sticker”, the lighting and management of the real wood-fired oven fed with bundles, and finally the Pane + Days project will be presented.
The lesson will be held on Google Meet and is free as it is an Intervention realized with EAFRD co-financing - sub-measure 1.1 “Support for professional training and acquisition of skills”. The teachers are Isabella Taglieri, a researcher at the Department of Agricultural, Food and Agro-Environmental Sciences of the University of Pisa, together with the expert baker Piero Capecchi.
In relation to the issues dealt with by the PS-GO, the final recipients of the initiatives are the employees of the agricultural, agri-food and forestry sectors, land managers. These subjects must have their registered office and/or at least one operational headquarters / local unit in Tuscany, as resulting from the company file or from the Chamber of Commerce registration. In
particular:
1. agricultural entrepreneurs, individuals and associates, registered in the business register, with a VAT number;
2. owners of forestry companies, individuals and associates, registered in the business register and who have a main or secondary activity with the ATECO code starting with A 02;
3. administrators and employees, also with managerial functions, of land managers, represented by municipalities, park bodies and public bodies managing the sites of the Natura 2000 network.
For the subjects referred to in points 1 and 2, employees and family assistants can also participate
registered with INPS, even on a fixed-term basis.
